Stuffed & Rolled Deboned Beef Rib with Thickened Gravy

Ingredients:
Filling (prepare beforehand)
100g Divine Deli bacon cubes
200g mushrooms, finely chopped
8–10 dried apricots, chopped
1 cup cooked couscous
½ cup pecan nuts, roughly chopped
1 medium onion, finely diced
2 cloves garlic, minced
1 tbsp oil or butter
Salt & pepper – to taste
Beef Rib & Seasoning
1 large deboned Divine Deli beef rib (ask any Divine Deli butcher for one)
Salt & pepper – to taste
1 tbsp barbecue spice rub
1 tsp crushed garlic
1 tsp fresh thyme, chopped (optional)
1 tsp fresh origanum, chopped (optional)
1 tsp fresh rosemary, chopped (optional)
Thin cotton string for tying
Gravy
Leftover pan juices from roast
1–2 tsp flour or cornstarch (for thickening)
Optional: splash of red wine or stock
Method:
Prepare the Filling
Heat oil/butter, fry onion, garlic & bacon until golden.
Add mushrooms, cook till soft.
Stir in apricots, pecans & couscous. Season, then cool.
Prep the Beef Rib
Lay rib flat, season inside with salt, pepper, spice rub, garlic & herbs.
Spread stuffing evenly, leaving edges clear.
Roll tightly, tie at intervals with string.
Bake & Roast
Place roll in covered baking dish with a splash of water or stock.
Slow roast at 160°C for 3.5 hours.
Uncover last 30 mins, increase heat to 200°C for a golden crust, basting with pan juices.
Make the Gravy
Strain pan juices into saucepan, simmer.
Stir in flour or cornstarch slurry to thicken.
Add wine or stock if desired. Simmer till glossy.
Serve
Slice into thick rings.
Generously spoon gravy over slices.
Perfect with roasted veg, mash or wild grains.
